Peeling hard boiled eggs is always a gamble. It seems the Fresh eggs are the hardest.
Hard-boiled eggs are a great snack. It's hard to remember that fact when you have left half the egg in the shell!! It's so maddening.
But now, I no longer get Crabby at those eggs and its a simple trick.
I don't know when I first came upon this info. It had to be at least 10 years ago.
So what is the secret?
1. Crack the egg before you put in the pot to hard boil. Not a big crack just a little one.
2. Cook to the desired hardness. I like to bring to a boil and then turn off the heat and let sit for 10 minutes.
3. Drain off all hot water add cold water and ice cubes. Let set until cold.
That's it! Easy to peel eggs!
My theory is that the cold ice water caused the egg to shrink away from the skin of the shell and that is what makes it easy to peel a hard-boiled egg.
To test my theory I recently did an experiment to see if I needed to actually crack the eggs. I put uncracked eggs in a pot and cooked as normal and did the cold treatment. To my surprise, they peeled just as good as the cracked eggs.
The Secret is the Ice cold water bath.
